At this point leaning towards Raspian... is there a way to do headless? Check which distro minio uses and which fs's raspian supports

Raspberry Pi OS seems to

• support ext4
• support f2fs (albeit this is the disk)
• support xfs
• maybe not btrfs... which isn't really recommended for minio anyway
