Bump minimum required Snakemake version #189

The Snakefile currently defines the minimum required Snakemake version as 5.5.4, which is probably wrong. I think we depend on the pathlib-functionality that wasn't added until at least 5.7.0, and to be honest I haven't tested with anything older than the most recent version since 2019. We should probably bump it to the latest release and just instruct users to upgrade to the latest Snakemake version (7.14.1 as of now).
