Just trying to simplify things for the "monorepo" nature of this repository by pushing things into subdirectories.
All the Makefile shenanigans for testing slow_odgi are in a separate Makefile within the slow_odgi directory.
Deleted the broken testing stuff for the depth accelerator. Maybe we can revive this someday, but it wasn't actually working, so it's simpler to remove it.
Move the guts of the big, long root README into subdirectories and link to them. Now the root README is a little more digestible.
