docs/howto: using overlays with cue/load in the Go API #149

Inspired by https://github.com/cue-lang/cue/discussions/3170 we should create an example that shows how to use cue/load.Config.Overlay noting the comments in https://github.com/cue-lang/cue/issues/607#issuecomment-873389451
