Update ProQuest export with requested changes #953

Thanks for the feedback on the Emory submissions. I've updated our code so that the file structure looks like this:

Unfortunately, I don't see a way for me to create a zip file to send you without having all of the content in a folder.

If this looks okay, I'd like to start sending another batch of files for processing from Emory. Did you find any other changes you wanted before we start doing that?
