🥒 Change `boxed-text` --> `sec` #19

This replaces the boxed-text for holding notebook cells with sections. This has a few advantages as these sections are for structure rather than boxed-text which is mostly used for styled content (a callout etc). The sections may or may not have a title (usually not), which means this is following the archiving tag set, I think that makes the most sense anyways as we are using many of the features of JATS.

As discussing in #23, we are good to merge this into main. Lots of chance for further review in the future. :)
