https://drupalusbcandmore.blot.im/upgrading-from-drupal-9-to-drupal-10 is highly relevant. There's a 8->9 article mentioned in https://docs.cweagans.net/composer-patches/troubleshooting/non-patchable-targets/ but mine is newer, uses two new composer plugins to automate a lot of the problem.
It also shows how to add patches to composer.json without manually editing composer.json.
