Remove Ruby v2.7 tests, include tests for 3.1 and 3.2

Test against only Ruby 3.0+

• Remove Jenkins stage testing against Ruby 2.7
• Include Jenkins stage testing against Ruby 3.1
• Include Jenkins stage testing against Ruby 3.2
