Make E2E *nix tests use the built package instead of using mounted volumes

Is your feature request related to a problem? Please describe.

Currently we do our E2E tests using a mounted docker-compose volume. While this is reasonable assurance that everything works, we should ideally do these tests with the same artifact we publish.
