feature/functional gnss testing + plain & structure logging + captures processor + misc

• add a captures processor to transform the ascii captures into binary files for testing and mocking
• use structlog for structured eventful logging in json and plain logging to console
• functionally test thoroughly the gnss service runner workflow with actual implementations
• miscellaneous changes and improvements
