The provenance of geometries can be recorded as a subfield of the geometry itself, similar to the 'type' of geometry. This info can be automatically assigned on import of shp/geojson-files as well. One could select it from a dropdown while importing and/or specify it in the attributes of each feature in the file to be imported. Upon manual creation on the map, it wil be set to that automatically. When editing in the editing modal, it can be selected from a dropdown.

Accurate surveying equipment (total station, gnss/dgps) (implies accurate z-values)
mobile GPS equipment (handheld GPS, phones) (less accurate z-values and location)
drawn in field desktop (accuracy unknown, depends)
from georeferenced drawing / map / image (accuracy unknown, depends)
