Update docs

[daler]

• lots of improvements to documentation in README (headers for nvim plugins are now links; details on what else init.vim is doing)
• setup.sh will now prompt the user for each command, along with what the command will do
• fancy colored output
• install separate conda envs for fd, visidata, tabview, black, radian, git-cola
• move apt-get installs to a separate file
