Refactor entities to use EntityDescriptions

• Refactor entities to use EntityDescriptions instead of manually setting attributes
  • Benefits readability and maintainability
  • Reduces the number of entity classes through the use of getter/setter lambdas
  • Each description is now in charge of transforming its own data to meet the API model, rather than the class object
  • Fix bug with the Select entity where the coordinator wasn't being asked to refresh after changing the value
  • Added code coverage to check for this bug
