Add YT_DLP Fallback

Fixes #444

Changes proposed in this pull request:

• adds yt_dlp as a fallback if streamlink doesn't have a plugin for the site
• file moving on stream completion now actually works
• move docker compose builds to use .env files
• some general dep updates
