The option Convert Email Text to Link only works for the filter the_content but for some extra fields, we may need options or hooks to apply this feature ourselves.
Please note that admin or dev should control which fields to convert plain email text to link & this option should work with the plugin Email Address Encoder so the plain email will turn into encrypted link.
