Refactor current issue templates into GitHub issue templates

My issue templates in the User Stories and Issues boards.

⚜️ What's the issue?

If I want to use these templates, I currently need to copy and paste the issue template into the issue I'm working with.

There seems to be a cleaner way to do this through another GitHub feature.

I realised that the Projects feature of GitHub doesn't allow you to use issue templates. The fate of this issue... is unclear...
