The manual didn't get updated on that - selecting workflow defaults other than "none" on the same tab implies modern chromatic adaptation, while "none" implies legacy white balance. It's documented in the page linked from the color calibration page, but clearly was overlooked here.
This is more likely to get resolved if you raise an issue in the dtdocs repository. I don't usually monitor this repo for user manual changes.

documentation problem: https://docs.darktable.org/usermanual/development/en/module-reference/processing-modules/color-calibration/ is not working, because button "auto-apply chromatic adaptation defaults" isn't available in ui.
Software and user manual are on version 4.6
