update composer.json to support laravel 11

@magamine this project is pretty dead, so my agency and I forked it and are now maintaining it here (and using it on real-world custom ecomm stores built on Laravel doing 10+ mill a year in revenue): https://github.com/wearepixel/laravel-cart
