chore: update to new dashmate version #601

Issue being fixed or feature implemented

New dashmate version doesn't update config without changes made. Dashmate config has changed.

What was done?

Made some unnecessary change to force service configs rendering
Added insight options to dashmate config template

How Has This Been Tested?

Deploying testnet
