Change default version in docs to `stable` #186

As discussed in the developer meeting today, I just changed the default version of the docs for dask and distributed to stable which refers to the most recent release.

For posterity: this is configurable in readthedocs (https://readthedocs.org/dashboard/dask/advanced/).
