Two recommendations:
Be flexible about timings. It's ok to go for five minutes I think. Also, encourage mild questions and discussion afterwards.
Actively encourage people in the crowd to present their work. They don't need to have anything prepared, but can point to a docs site or something. A lot of people in the room will have really relevant experience but will think that they're not expert enough to speak. Badgering folks here is, i think, of great service to all.
