Pin upstream theme #62

It looks like the upstream theme is going to go through some large changes in executablebooks/sphinx-book-theme#472. This should make our lives easier in the long run but breaks things today. Pinning for now so that we can migrate things over carefully when the new version is released.

Yes, thanks for the reminder. I just tagged 2.0.2.

I ended up pushing a separate commit (https://github.com/dask/dask-sphinx-theme/commit/ea0d272c994691cb0a8d2bf88ad2fc55230c8b97) to bump the __version__ since we're not yet using something like versioneer (xref https://github.com/dask/dask-sphinx-theme/issues/35). 2.0.2 is on PyPI now
