Episode 2: Add Checklist formatting to any step-by step directions participants are expected to follow #146

In #127 we decided to use checklist formatting (e.g. http://www.tim-dennis.com/libcarp-pitt-notes-exercises/03-basic-functions-I/) for directions which participants can follow, and Exercises (blockquote class 'challenge') for proper exercises where participants are expected to work out an answer/approach for themselves. This may mean converting some of the existing text or exercises into checklists.

This issue to add the appropriate 'checklist' formatting to any step-by-step directions in Episode 2. In some cases this may mean changing an existing 'exercise' to a set of step-by-step. In others it may mean just adding the formatting to something that is current plain text.

Hi @ostephens I've made a start on this at https://github.com/data-lessons/library-openrefine/pull/154. Please let me know if the PR is too big, I can scale it back to smaller ones. I figured this episode is a fairly straight forward one.
