Thank you @villanueval for your hard work on this. It looks like you've taken a very thoughtful approach to updating and improving the lesson. I particularly appreciate the work you have done to make the lesson more accessible by improving alternative text descriptions and the instructions for installing and launching the software.

I want to tag @datacarpentry/curriculum-advisors-ecology here, as one of the suggested changes in this PR is to modify the dataset used in the lesson. According to the rubric for consulting CACs, one of the topics that Curriculum Advisors should be consulted on is "any new versions of a dataset (either a new release or a modification of existing data)."

I hope this won't delay you getting the other improvements in this PR merged, but getting the CAC's perspective is important e.g. in case the new version of the dataset used here is likely to have an impact on the other lessons in the DC Ecology curriculum.

Good catch @tobyhodges, thanks! I missed double checking the docs for details like this. Hopefully the changes don't cause issues elsewhere.

As mentioned on https://github.com/datacarpentry/OpenRefine-ecology-lesson/issues/285, the CAC reviewed these changes. There were no objections, so please go ahead and merge those changes.

Looking forward to seeing these all in action next week!
