Reuse Proj folder from shell/datawrangling #145

One of the things I love most about DC ecology is that we continue to build up a nicely structure project folder throughout the workshop. Maybe instead of making dc_genomics_r they could continue with the folder they make in the shell lesson and then use in the data wrangling lesson, dc_workshop?

I think this was the intent and the names just got switched along the way. I support this change.
