Update guide.md #96

Hi all! This is an attempt to update the Instructors guide for use with the newly updated lessons. I've copied over the relevant bits from the Ecology Spreadsheet lesson instructor notes and added a few points where I could. Additions and suggestions are very welcome! Also @taylorreiter @ryanpeek @jessicamizzi - who have taught or worked on these lessons recently.

Very good @ErinBecker. No problem with the merge working. Shall we merge this and then talk about wordsmithing the page?
