Revert https://github.com/datacite/bolognese/issues/172 to return publisher_obj in DC JSON.

Merging this requires the following to be updated to use the latest bolognese gems:

lupo orcid_client volpino - uses the orcid_client poodle levriero cirneco ?? - hasn't been updated in 4~5 years. kishu ?? - hasn't been updated in 4 years.
