Explain / simplify configuration #14

Currently the main README.md specifies a complex configuration file.

  1. Need to explain when / if this is needed
  2. Ideally should not be necessary (sensible defaults etc.)

i.e. the goal should be to ensure that starfish-clj works "out of the box" as a library dependency
