Cleaning up: deleting unused modules, functions and folders, regenerating requirements.txt, addressing outstanding text pre-processing issues.

The set of jsons and config folder have been removed from this branch as part of tidying, they're only left on main, and should disappear once this is merged in?

Did additionally remove .idea directory, that shouldn't be here!
