Document configuration settings for topology (short-term fix) #105

Our current documentation focuses on running the proxy with https://github.com/datastax/zdm-proxy-automation but if someone wants to run this proxy without using the automation then they don't have any documentation describing the configuration settings of the proxy.

We should document this somewhere, possibly in a new docs folder in this repo?
