change wording to polished? explanatory implies causality. (John's sugestion)

Note: if this happens, we will have to change lesson in Organizing Data Science Projects where figures_exploratory and figures_explanatory are directories

John's suggestions: exploratory to polished, maybe unpolished to polished, or rough to customized
