Session data is stored in app memory

This causes the 2 issues:

Impossible to horizontal scale as all session data is stored in the memory of the process so when it's gone all data is lost. Storing in some db, eg, redis would solve the issue. See https://www.npmjs.com/package/express-session#session-store-implementation
Chance of crashing due to out of memory error

Acceptance criteria

[ ] When I run the app in non production mode, session data is stored in memory (so useful for quick dev work).
[ ] When I run the app in production, all session data is stored in a db enabling horizontal scaling of the service.
