Update readme example to do, what comment says it does.

Ups! Left the comments I added for Copilot to write the CURL and echo messages.

Actually, I'd love to keep the echo as it displays the IPFS CID gateway URL where all the datasets are.

Need to figure out an easy way to surface which datasets are available in the readme and make them download with one click.
