upgrade to v3 of the ESV API #23

I forked the repo so I can try to do it myself, but I've never worked in Ruby before so it might take some time. Really cool to have found this anyways!

@tscottritter I've updated the dependencies in preparation for this, but do have limited time to work on this at the moment. Feel free to jump in if you do have time. (It's a lovely language!)

@tscottritter I've updated the code, and it was working, but I think my host has broken it while I was on holiday. The code's there if you want to run it yourself, but I'll get it rehosted again soon with ESV v3 re-enabled.
