Ok here's a path forward:
This will give us the best of both worlds.
Some more quick thoughts - likely some overlapping tickets:
Anything without the vintatge will be considered part of the core. Things like cask number/etc are not relevant enough to put into core metadata. Those can be kept in tasting notes and/or an extra field when you add to collection.
Cask information I think becomes three components:

I was trying to avoid vintage information, but there's a need, at least, for a release date.
They're not quite the same thing, but release date could also fill the need for vintage year.
