Update signature related fixtures #208

This PR updates the fixtures to align to the current spec, including adding in those that feature a header value.

Discussed on the WG call of the 22nd of August! Will need to check the generator points on the spec for correctness and consistency with the new fixtures.

Merging with the recent merge of #214, still further work required on refining these fixtures.
