Update Status-List Links to new URL #88

Addressing issue #19

Status List 2021's github repo has been moved, so links need to be updated.

Also making sure all links point to Status List v0.0.1 tagged version for our profile v0.1.

When we move our profile to v1.0, then we can switch back Status List links to latest W3C hosted document.

Just realized.. need to update Test Vectors section with new VC containing v0.0.1 Status List format... working on that

Note: this PR doesn't make any edits regarding the status-list bit-order brought up during Feb 1st discussion by Christer Ljung (MSFT).

Latest bit-order discussion is being tracked here: https://github.com/w3c/vc-status-list-2021/pull/45

Depending on result in that PR, we can make a separate PR here in the future to mention bit-order.
