The goal is to reduce bundle size. This may help, by eliminating jetty from the jar?

Now that I'm deploying with docker this might be irrelevant? Jetty's gotta be in the container one way or another

Gonna go ahead and call this irrelevant - I don't think writing a Clojure server is appropriate at all for this project. Closing.
