Set MIDI channel #9

Add a setting for the MIDI channel (possibly set in the control menu)

If we do permit multiple channels (right now we map only to Channel 1), we need to ensure we follow the General MIDI spec and send drum pads to Channel 10.

Seems like only percussion has a bespoke channel? Will auto-set to channel 10 & see about a configurable value in settings.
