docs: Fastembed Ranker - update readme and fix example #1198

Proposed Changes:

Following https://github.com/deepset-ai/haystack-core-integrations/pull/1178, I forgot to change the Readme.md. So, I added an example for the new code and tested and fixed the others. Also, I found an issue on the examples/ranker_example.py that I wrote

How did you test it?

I checked the page and each example manually. Plus, I ran the unit tests and the linter
