Use the pre-defined `model` for the model name in Astra DB docs #212

Fixes a runtime error for that variable not being defined

@masci thanks for merging in our tracking PR! It all seems to work, but i did note a small issue in the docs where the pre-defined model wasn't being passed in the examples. This small update should fix it.
