Update `run_tutorials.yml` for 2.x tutorials #314

Part of #197. Depends on #312, first merge that PR.

This PR changes run_tutorials.yml to only run Haystack 2.x tutorials. Whenever a PR that edits a 2.x tutorial is opened it will trigger this workflow.

It will start a job for every edited tutorial that can run.
