doc: Update demo.yaml for 0.0.1.8 #55

0.0.1.8 added requirement that source galaxies have a mass distribution. Add one to demo.yaml so that Notebooks/DeepLenstronomyDemo.ipynb runs.

I just used the same mass profile as the lens galaxy.

Something I do in my projects is add example notebooks to the tests. It's not perfect, but it does catch oversights like this.
