As Ezra I want more flavors to choose from so that I can better manage CVE posture and package sizes for my environment.

Describe the solution you'd like

Given I view uds-package-sigstore in the GHCR registry(ies)
Then I should see flavors in addition to upstream (unicorn / registry1)

Describe alternatives you've considered

registry1 likely won't be available / ready by the time this issue is created but we should at least create a unicorn flavor.
