Python 3.6 is no longer supported, and 3.10 is the latest release. The packaging should be updated to reflect this.

Updated title. ~~3.11 is now the latest release.~~

ahem. 3.11 is apparently still a release candidate, so getting it working in CI is more trouble than it's worth. I'll wait for the full release.
