Feat: update build pipeline

Proposed Changes

This PR completely overhauls the old ci and release pipelines and proposes a more streamlined setup

• Reworks .github/workflows
  • Removes old publish and release workflows
  • Introduces re-usable install-dependencies action
  • Introduces a (release-required) verify workflow, that can be further enhanced in the future
  • Introduces changeset workflow as new release pipeline
  • Introduction of a fast-track canary release workflow
• Preparation for future code refactorings with better tsconfig setup
• Separation of package.json files for [docs, src and test]
  • Together with changeset, this prepares the repo to also host other sources, such as examples or configs
  • Enables cleaner split of production and development dependencies (as we can define dev dependencies "globally" and only specify production deps per workspace)

Dependencies

• Introduces changesets
  • this allows removing both release-it and auto-changelog dependencies
• Removes microbundle and replaces with tsc building (no new dependencies)

Other changes

• introduces pre-publish-only script to explicitly remove the "type" property from package.json in releases, as it is set specifically via tsc build commands
