Feat: documentation setup with vocs

[!WARNING] This PR will remove the automatically created typedoc documentation content and is a proposal for a new setup.

We should instead create our own documentation on function level where it is needed.

Proposed Changes

• Remove docusaurus and typedoc
• Introduce lightweight documentation framework vocs
• Initial documentation setup (does not include typedoc api content)
