TEAM-1375 Dependency upgrades. Disabled a number of integration tests.

What problem does the pull request solve?

These changes upgrade the dependencies jose4j and gson to clear Dependabot security alerts. I also updated documentation and disabled some integration tests, which seem to be out of sync with API. I regard overhauling the integration tests as beyond the scope of this ticket, and Maven will not let me deploy the .jar file with failing integration tests.

I will create a new tag once this is merged.
