Create QA build for updated SIS identity flow

Description

The Identity team has released another alpha for their new custom sign-in solution with a variety of improvements. We want to test out this new solution and report any bugs, issues, or feedback we have for them. This work would involve replacing our OAuth endpoints and updating some of the parameters we send during the auth process.

Acceptance Criteria

• [ ] Determine if there have been any changes since the last implementation documentation was sent to us VSP Identity Sign in Service - PKCE OAuth.pdf
• [ ] Using any new documentation, do the following:
  • Update ENV variables and add new variable for refresh token
  • Check payloads and compare to what is expected from the document
  • Compare PKCE and verify that it matches
• [ ] Re-bundle the app for both iOS and Android.
• [ ] Build the staging app for Android and iOS, then test logging in with any test user and record the whole process for both
• [ ] Log in with a user in iOS and Android, log out immediately and then log in and record the whole process
• [ ] Post the videos in the comments of this ticket
• [ ] Record any issues you find in this ticket.
