CU - Set up translation referencing in unit tests #5743

Proposed Change

We want to reference our translations in our unit tests rather than hardcoded strings. In order to do this, need to set up the react-i18next package with Jest. See https://react.i18next.com/misc/testing

Why Should We Prioritize?

Reduce the need to fix broken tests every time we change/update copy
Allow us to support multiple languages in the future by referencing translations rather than hardcoded strings
